Ingredients: 100% ewe’s milk, salt, vegetal rennet (seeds of an artichoke), and milk enzymes. A semi-mature hand crafted cheese aged for at least 60 days in oak barrel with the rind consisting of tree ash and olive oil.

This cheese carries a very unique yet delicious after-taste making it one of the most celebrated cheeses on farm.
