Ingredients: ewe’s milk, salt, natural rennet, salt, and milk enzymes. This cheese is aged for at least 180 days at cave temperature while the rind consist of olive oil sludge/sediment.
This is an open-grained pecorino with a slightly nutty aftertaste.
